Description:
Pale lemon with green highlights and a bright, expressive nose of grapefruit zest, lime, green apple and elderflower with subtle chalky minerality and fresh herbs. On the palate it’s crisp and lively with vibrant citrus fruit, gooseberry and wet stone minerality that brings clarity and tension, balanced by a slender core of acidity and a clean, invigorating finish that carries citrus peel and flinty undertones. This is a refined, refreshing Sauvignon Blanc with Loire character that’s both more floral than some Sancerre and very food-friendly. Pairs well with oysters, steamed mussels, shrimp tempura, feta and goat cheese, halibut, and pan seared scallops.
