On the palate it is crisp and energetic, combining vibrant orchard fruit with fine mousse and bright acidity that gives freshness and precision. Subtle hints of honey, biscuit and mineral salinity carry through the long, dry finish, reflecting extended lees ageing and its balanced Extra-Brut style. Pairs well with oysters, scallops, sushi and creamy risotto.
