On the palate it is crisp and energetic, combining bright orchard fruit with lively acidity and a fine, persistent mousse. Hints of lemon zest, toasted almond and saline minerality linger through the long, dry finish. Pairs well with oysters, sushi, smoked trout and fresh goat cheese.
