The 2019 Bodegas Virgen del Galir “Sede e Fame” As Ermitas opens with complex aromas of preserved lemon, green apple and pear layered with notes of chamomile, almond, flint and saline sea breeze. On the palate it is light to medium-bodied and intensely focused, combining crisp citrus and orchard fruit with razor-sharp acidity and a taut, chalky texture that gives the wine remarkable precision and energy. The finish is long and elegant, with lingering mineral, citrus peel and smoky undertones that continue to evolve in the glass. Pairs well with oysters, grilled octopus, salt cod, aged cheeses and simply prepared seafood dishes.
